Banana Coconut “Ice Cream”

Banana ice cream

Eating real food, all the time is easy when you LOVE everything you eat. No deprivation necessary.

This easy, all-natural treat can help you cool down on a warm summer’s day or help you refuel after a tough workout (good ratio of glucose + potassium). SO. GOOD. And simple, 100% real food—one of my favourite indulgences and solution to a sweet-tooth!

Ingredients & Instructions

  • Peel and dice 1 large, ripe banana and place in a bowl in the freezer
  • Allow to freeze (depends the temperature of your freezer, but up to an hour should leave it with a good consistency)
  • Mash the frozen banana with a fork until smooth
  • Add 2-3 tbsp coconut cream or thick coconut milk and stir in well
  • Sprinkle a few drops of vanilla, shake of cinnamon and combine
  • Enjoy right away or return to  freezer until it achieves desired consistency

Serving Suggestions

  • Top with nuts of your choice, a dash of cinnamon and a few squares of 99% cocoa dark chocolate (pictured)
  • Top with a melted spoonful of salted almond butter (or nut butter of your choice)
  • Serve with assorted fresh or frozen berries and unsweetened coconut flakes
  • For chocolate ice cream, mix in a tbsp of 100% cocoa powder (or more, if you like a richer, darker chocolate) along with coconut cream during the fourth step
